I'm reliably told that using the turn signal switch, I can turn off the headlights whilst engine is running. Any instructions please ?

Found this thread on BMWSportTouring, How do you turn off Headlights? - Bike Related Things - BMWSportTouring it's for a Hexhead but might be worth a try on a Camhead.

FIRST...Turn the ignition on and allow the startup-check cycle to complete; this takes a few seconds. The headlights will be off (this is normal).2. THEN...Hold turn-signal cancel switch for 4-5 secs. Release.3. NEXT...Hold right turn-signal switch for 4-5 secs. Release.4. FINALLY...Start engine.Headlights should remain OFF.  The headlights will be off, but the running lights and tail light will remain on.This will reset next time you switch off the ignition.I just verified this on my 2009 R1200RT.
Just remebered that the switches are totally different on a Hexhead to a Camhead but you never know.

Yep, works the same for me on a 2012 Camhead.

With 2009 RT running and kicked, and after using the procedures above (except that I didn't have to simultaneously hold the cancel and right turn switches in the second step) the headlights turned off.  BUT, they turned back on as soon as the bike started moving (which I didn't realize for a while - but repeating the procedure didn't keep them off when moving). My battery was weak and I wanted to minimize electrical usage in daylight. I guess they don't want you riding with them off, but permit it when you're working on the bike's electrics? Is there any way to ride with them off?

Other than disconnecting, perhaps not.
